During a discussion in Well+Good’s Cook With Us Facebook group (which you should totally join, BTW!), readers shared the winter lunch ideas they’ve been loving. And there was a little bit of everything. From stir-fries to burrito bowls to soups, here are some options that will spice up your weekdays.

1. One-pan roasted vegetable hash



If you want to load up on a warm and cozy bowl of flavorful veggies for lunch, look no further than this recipe from chef Nyesha Arrington. You just grab your leftover produce, cut it up, and pop it in the oven. Paired with cooked lentils, you’ll have a protein-packed meal to enjoy.

2. Vegan lentil and walnut tacos



When you prep this vegan taco “meat” on Sunday, you’ll have a healthy and flavorful lunch you can devour all week long. “The taco meat is a filling mix of mushrooms, cauliflower, walnuts, and lentils,” says chef Palak Patel. “The mushrooms have a lot of flavor, the lentils give it a heartiness, and the cauliflower and walnuts give it a nice crunch.”

3. Warming one-pot vegetable dal



This vegetarian dal recipe is loaded with veggies. Better yet, you can make it in one pot in three simple steps. All you need are a bunch of veggies, lentils, tomato paste, and some warming spices.

4. Tofu stir-fry

Stir-fries are a great way to get your veggies in. This recipe has an easy-to-make (and incredibly flavorful!) sauce made from peanut butter, coconut aminos, maple syrup, lime juice, and chili garlic sauce.

5. Flavorful buddha bowl



This buddha bowl is another great lunch option to prep for the week. “There’s so many different textures and flavors and spices and herbs,” said Rachel Ama, a vegan recipe creator and author of Rachel Ama’s Vegan Eats.

6. Vegan burrito bowl



What’s not to love about a burrito bowl? This recipe from Jenné Claiborne of Sweet Potato Soul is like Chipotle… but better. Pro tip: You can use your walnut taco meat in this dish, too.

7. Creamy white bean and kale soup

This recipe is everything you want in a cozy soup. It’s loaded with veggies, is high-protein thanks to the white beans, and oh-so-tasty. “It’s really healthy but surprisingly creamy and packed with so much flavor,” said chef Nisha Vora of Rainbow Plant Life.

8. Turmeric kale fried rice

Chef Candice Kumai‘s anti-inflammatory fried rice recipe is a must-try. Between the leftover grains, greens, tofu, turmeric, and garlic, it’s so easy to make.
